Basic Green Smoothie

Raw Kale Salad With Lemon-Honey Vinaigrette

SERVES: 1     
     

Ingredients                                     

  • 1  cup  orange juice or fresh apple cider
  • 1  cup  berries, frozen
  • 1  cup  kale
  • 1  cup  spinach
  • 1 tbsp. raw honey

              

Directions

  1. Throw ingredients in blender and process until smooth.

Raw Kale Salad With Lemon-Honey Vinaigrette

SERVES: 4-6

Ingredients                                     

  • 2  bunches  kale, stems and ribs removed, torn into bite-sized pieces. I prefer to cut into thin ribbons
  • 1⁄2 cup  dried cranberries, dried cherries are my favorite
  • 1⁄2 cup  fresh fruit, i.e.. apples, blueberries, pineapple, mango, etc
  • 1⁄2 cup  red onion, diced
  • 1⁄2 cup  sunflower seeds, shelled, I have used other nuts choose your favorite
  •  vinaigrette
  • 3  tablespoons  fresh lemon juice
  • 1⁄2 cup  extra virgin olive oil
  • 1⁄8 teaspoon  ground cinnamon
  • 2  tablespoons  raw wildflower honey

              

Directions

  1. Combine the four salad ingredients in a large bowl.
  2. Whisk together the vinaigrette ingredients and toss with the salad. * I like to massage the kale and dressing at this point. Just massage it with both hands  for a few minutes. Toss in any additional fruits or berries.
  3. Refrigerate for at least one hour prior to serving to allow the flavors to develop. Serve and Enjoy!
  4. This is even better the next day and hold up well w/o wilting.
  5. NOTE: Use any type of nut or seed or fresh fruit. Try adding mango, watermelon or  blueberries to the mix!

Chicken Breast With Honey-Balsamic Glaze

Chicken Breast With Honey-Balsamic Glaze

Ready in: 13 minutes

Serves: 4

Ingredients                                     

  • 1 1⁄2 teaspoons  dried thyme
  • 1⁄2 teaspoon  salt
  • 1⁄4 teaspoon  black pepper
  • 1  teaspoon  olive oil
  • 4 (4  ounce)  boneless skinless chicken breast halves
  • 2  tablespoons  balsamic vinegar
  • 2  tablespoons  raw honey

              

Directions

  1. Combine first 3 ingredients; sprinkle over both sides of chicken. 
  2. Heat oil in a large nonstick skillet over medium-high heat.  Add chicken; cook 7 to 8 minutes on each side or until chicken is done. 
  3. Transfer chicken to a platter; keep warm.  Reduce heat to medium-low; add vinegar and honey to pan.  Simmer 1 minute or until glaze thickens; stir constantly.  Pour glaze over chicken.

Paleo Mango Lassi

Raw Honey and Goat Cheese Appetizer

Chicken Breast With Honey-Balsamic Glaze

Prep time:  10 mins                       

Servings: 2


Ingredients:
- 2 ripe mangoes
- 1 (13.5 ounce) can coconut milk
- 2 Tbsp. raw honey
- 1/2 cup ice
- Dash of cardamom or fresh mint leaves (optional)


Directions:
1. Peel and cut mango in chunks. Place chopped mango, coconut milk, raw honey and ice  into blender and mix for about 1 minute.


2. Pour into glasses and sprinkle a little cardamom or some fresh mint leaves (optional). Serve and enjoy!

Honey & Ginger Warm Lemon Water

Raw Honey and Goat Cheese Appetizer

*When using honey for medicinal purposes like in this recipe, sourcing raw, local honey may be best for your body and immune system. 


Ingredients

  • 1 organic lemon, sliced thin, seeds removed
  • 1 inch piece of fresh ginger, peeled and thinly sliced
  • 1 teaspoon of raw or local honey
  • 8 ounces of boiling water


Instructions

  1. Add lemons and ginger to the bottom of your favorite cup.
  2. Pour boiling water into cup.
  3. Stir in honey as desired.
  4. Enjoy!

Notes

Important Note About Honey In This Recipe: Adding raw honey to boiling water will denature some of the most important health promoting properties. When preparing this recipe, wait until the water is cool enough to sip comfortably before stirring in your honey to assure you are reaping all of the available health benefits.

Raw Honey and Goat Cheese Appetizer

Prep time: 5 minutes
 Ingredients   3 tbsp apricot preserves 4 oz goat cheese 2 tbsp raw wildflower honey   ¼ cup pistachios 2-3 leaves of fresh basil (finely chopped)
 Directions: 

1) On a place, spoon apricot preserves. 

2) Lay goat cheese on top of the apricot preserves. 

3) Sprinkle pistachios on top of the goat cheese 4) Drizzle raw honey over the goat cheese. Lastly, add chopped basil on top. 


Serve with bagette slices or crackers!
